Step 1
Whisk egg yolks with sugar in a bowl until pale, about 1 minute. Stir in cornstarch until smooth.
Step 2
Heat milk in a saucepan over medium until steaming, about 3 minutes. Pour slowly into egg mixture, whisking constantly.
Step 3
Pour custard back into the saucepan, stir constantly over medium heat until it thickens and coats the back of a spoon, 2–3 minutes. Cool slightly.
Step 4
Cut thawed puff pastry into 4 rectangles. Spread 2 tbsp custard on each, leaving a 0.5-inch border. Sprinkle almonds and pearl sugar evenly on top.
Step 5
Place pastries on a baking sheet. Bake at 400°F until golden brown and puffed, 12–15 minutes.
Step 6
Cool for 2 minutes on the pan. Serve warm or at room temperature.
