Step 1
Pat ribs dry with paper towels. Season generously on both sides with salt and black pepper.
Step 2
Heat a heavy skillet or grill pan over medium-high until it smokes, ~2 minutes.

Sear ribs 2 minutes per side without moving — they should have a dark crust and sizzle loudly.
Step 4
Lower heat to medium. Scatter minced garlic around the ribs and cook until fragrant, ~90 seconds.

Transfer skillet to a 400°F oven (or finish on indirect grill heat) for 3–4 minutes until ribs reach 130°F internal temp.
