Step 1
Peel bananas and cut each into two pieces lengthwise, creating long quarters.
Step 2
Lay a tortilla flat. Place two banana quarters in a line near the bottom, leaving 1 inch from edge.
Step 3
Roll the tortilla tightly around the banana, tucking the sides in as you go. Repeat with remaining banana and tortilla.
Step 4
Heat oil in a skillet over medium-high until it shimmers, about 60 seconds.
Step 5
Sear the rolls seam-side down until golden and crispy, about 2 minutes per side without moving.
Step 6
Transfer to a plate and immediately sprinkle cinnamon sugar over all sides while still warm.
Step 7
Let cool for 1 minute, then slice each roll in half crosswise and serve.
