Instructions

  1. Step 1

    Soak the 1 cup dried black-eyed peas in water overnight or for at least 8 hours. Drain and rinse well.

  2. Step 2

    In a blender, combine the soaked peas, 0.5 medium onion (chopped), 0.5 small scotch bonnet pepper (seeded), 1 teaspoon salt, and 0.25 cup water. Blend until smooth, scraping down as needed.

  3. Step 3

    Transfer the batter to a bowl. If it's too thick, add a tablespoon of water at a time until it drops slowly from a spoon. Beat the batter with a spoon for 2 minutes to incorporate air.

  4. Step 4

    Heat 2 cups vegetable oil in a deep skillet over medium-high until a drop of batter sizzles immediately, about 350°F.

  5. Step 5

    Drop tablespoons of batter into the hot oil, frying in batches without crowding. Cook until golden brown and crisp, about 3-4 minutes per side, turning once.

  6. Step 6

    Remove with a slotted spoon and drain on paper towels. Serve hot as a snack or appetizer.
