Step 1
In a small bowl, whisk together 1/4 cup soy sauce, 1/4 cup water, and 1 tbsp cornstarch. Set aside.

Heat 1 tbsp vegetable oil in a large skillet over high heat. Add 1 lb beef slices in a single layer; cook until browned, about 2-3 minutes per side. Remove beef and set aside.
Step 3
In the same skillet, add 1 tbsp oil and 3 cups broccoli florets. Stir-fry until bright green and tender-crisp, about 4-5 minutes. Add 3 minced garlic cloves and cook for 30 seconds until fragrant.
Step 4
Return beef to the skillet. Pour in the soy sauce mixture. Stir and cook until sauce thickens and coats the beef and broccoli, about 1-2 minutes. Remove from heat and keep warm.
Step 5
In a separate large skillet or wok, heat 1 tbsp oil over medium-high heat. Add 2 beaten eggs; scramble until just set, about 1 minute. Add 3 cups cooked rice and 2 sliced green onions; stir-fry until rice is hot and slightly toasted, about 3-4 minutes.
Step 6
Serve the beef and broccoli over the fried rice. Optionally, add a dash of sesame oil or chili flakes for extra flavor.
