Instructions

  1. Step 1

Pound the 2 pork cutlets to 1/2 inch thickness. Season both sides with salt and pepper.

  2. Step 2

Set up three shallow dishes: 0.5 cup flour, 2 beaten eggs, and 1.5 cups panko breadcrumbs.

  3. Step 3

Dredge each cutlet in flour, then egg, then breadcrumbs, pressing firmly to coat. Set aside on a plate.

  4. Step 4

Heat 0.5 cup vegetable oil in a large skillet over medium-high until shimmering, about 2 minutes.

  5. Step 5

Fry the cutlets in the hot oil until golden brown and cooked through, about 3-4 minutes per side. Drain on paper towels.

  6. Step 6

In a small bowl, whisk together 2 tbsp soy sauce and 1 tbsp rice vinegar for the dipping sauce.

  7. Step 7

Serve the cutlets with the sauce and 2 cups green leaf lettuce on the side.
