Step 1
Add the sour cream, 2 chipotle peppers, minced garlic, and 2 tablespoons lime juice to a blender; blend on high speed for 30 seconds until smooth and bright red, then set aside.
Step 2
Heat 2 tablespoons olive oil in a 12-inch skillet over medium-high heat until the oil shimmers and slides quickly when you tilt the pan, about 60 seconds.
Step 3
Add the shrimp to the hot skillet in a single layer; let them cook without stirring for 2 minutes until the undersides turn from translucent to opaque pink.
Step 4
Flip each shrimp over one at a time using tongs and cook for another 1 minute until the second side is also opaque pink; you should have cooked shrimp throughout.
Step 5
Pour the chipotle sauce over the cooked shrimp and stir gently with a wooden spoon for 30 seconds until the shrimp are evenly coated.
Step 6
Remove the skillet from heat and transfer the shrimp and sauce to a serving plate or bowl.
