Step 1
Heat olive oil in a large pot over medium-high heat until shimmering, about 90 seconds.
Step 2
Brown beef in batches without stirring for 3 minutes per side until deep golden crust forms.
Step 3
Remove beef to a plate. Add onion to the pot and cook until softened and browned, 4 minutes.
Step 4
Stir in garlic and cook until fragrant, about 30 seconds.
Step 5
Pour in tomatoes with green chiles and broth, scraping up browned bits from the bottom.
Step 6
Return beef to the pot. Add potatoes and stir to combine.
Step 7
Bring to a boil, then reduce heat to low. Cover and simmer 30 minutes until beef is tender.
Step 8
Taste and adjust salt and pepper. Serve hot in deep bowls.
