Step 1
Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper.

In a medium bowl, whisk together 100 ml whole milk, 1 large egg, 1 tablespoon all-purpose flour, 0.25 teaspoon white pepper, 0.25 teaspoon salt, and 1 small pinch of freshly grated nutmeg until completely smooth and no flour lumps remain. Set the custard mixture aside.
Step 3
In a separate bowl, toss together 200 g finely grated Gruyère and 150 g finely grated Emmental, mixing them evenly so the cheeses won't separate during baking.

Remove the puff pastry sheets from their packaging and lay them flat on your work surface — if they're very cold, let them sit for 2 minutes to soften slightly so they're pliable but not warm.
Step 5
Using a 4-inch round cutter or the rim of a glass, cut 4 circles from the first puff pastry sheet. Repeat with the second sheet to yield 8 circles total. Transfer 4 circles to your prepared baking sheet, leaving at least 2 inches between them.
Step 6
Brush 2 tablespoons melted butter lightly over the 4 pastry circles on the baking sheet — this helps them puff and brown evenly.
Step 7
Divide the mixed Gruyère and Emmental into 4 equal portions and place one portion in the center of each buttered pastry circle, leaving a 1/2-inch border uncovered — this border prevents the cheese from leaking out the sides.
Step 8
Top each filled circle with one of the remaining 4 pastry circles, pressing the edges down with the tines of a fork to seal them together. This creates a decorative pattern and ensures they won't open during baking.
Step 9
Using a small knife, cut a tiny slit in the top center of each pastry — this lets steam escape and prevents the pastry from bursting explosively in the oven.
Step 10
Place the baking sheet in your preheated 400°F (200°C) oven and bake for 12-15 minutes, until the pastry is deeply golden brown and puffed around the edges. The color is key — pale pastry means under-baked, and the interior won't be hot enough.
Step 11
Remove from the oven and immediately pour about 2 tablespoons of the custard mixture through the slit in the top of each pastry. Work quickly — the steam will help the mixture flow down into the cheese filling. If a pastry seems too full, you can leave some custard for dipping.
Step 12
Return the pastries to the oven for 1-2 minutes, just until the custard settles inside — you're not trying to bake it fully, just to let it soak into the cheese layer.
Step 13
Remove the chäschüechli from the oven and let them rest for 2 minutes on the baking sheet so the filling sets slightly and becomes less prone to running all over the plate. Transfer to serving dishes while still hot — the cheese should still be slightly oozing from the center.
