Step 1
In a medium saucepan over medium heat, melt the 2 tbsp butter. Whisk in the 2 tbsp flour and cook for 1 minute until bubbly.
Step 2
Gradually whisk in the 0.5 cup milk and continue stirring until the sauce thickens, about 3-4 minutes. It should coat the back of a spoon.
Step 3
Reduce heat to low and add the 2 cups shredded cheddar cheese. Stir until melted and smooth, about 2 minutes. Season with salt and pepper if desired.
Step 4
Warm the 4 large flour tortillas in a dry skillet over medium heat for 30 seconds per side, until soft and pliable.
Step 5
Divide the cheese sauce among the tortillas, spreading it down the center. Top each with 0.5 cup shredded lettuce, a few tomato slices, and 0.5 cup corn chips.
Step 6
Fold in the sides of each tortilla and roll tightly to enclose the filling. Serve immediately while warm.
Step 7
Optional: add a spoonful of salsa or sour cream on top if you have them.
