Pat fish chunks dry on paper towels. Season generously with salt and black pepper on all sides.

Whisk flour, cornstarch, 0.5 tsp salt, and 0.25 tsp black pepper in a bowl. Pour in sparkling water, whisking until smooth.

Heat oil in a heavy pot or deep skillet to 350°F, about 4–5 minutes. Water flicked into the pan should sizzle immediately.
Step 4
Working in batches, dip fish chunks into batter, coating fully. Slide into hot oil and fry 2–3 minutes until deep golden brown.
Step 5
Lift cooked fish out with a slotted spoon and drain on paper towels. Season with a pinch of sea salt while still hot.
