Step 1
Peel green plantains, cut into 2-inch thick rounds. Heat oil in a deep skillet to 350°F.
Step 2
Fry plantain rounds 2 minutes per side until pale golden. Remove and rest on a paper towel.
Step 3
Once cool enough to handle, press each round gently between two spoons to flatten into a cup shape.
Step 4
Return plantain cups to hot oil for 90 seconds per side until deep golden. Drain well.
Step 5
Warm pork with a pinch of salt and pepper. Stuff each plantain cup with pork and top with cheese.
Step 6
Squeeze lime over tostones and serve immediately while crispy.
