Donauwelle Cake Slices

Jammy-fruity German layer cake that's baked in a sheet pan and sliced warm. A tangy-sweet maraschino and chocolate swirl on vanilla sponge that tastes much harder than it is.

Instructions

  1. Step 1

Preheat oven to 350°F. Line an 8×8-inch baking pan with parchment.

  2. Step 2

Whisk eggs and sugar until pale and fluffy, about 2 minutes. Fold in flour, baking powder, and melted butter until just combined.

  3. Step 3

Pour batter into pan, spread level. Drain cherries and scatter them evenly over the top.

  4. Step 4

Dust cocoa powder over the cherries. Use a skewer to swirl cocoa and cherry juice into the batter, creating marbled veins.

  5. Step 5

Bake until a toothpick inserted in the center comes out clean, 16–18 minutes.

  6. Step 6

Cool 5 minutes in the pan, then slice and serve warm.
