Instructions

  1. Step 1

    Set the oven to 350°F and wait for the indicator light or beep telling you it has finished preheating, about 10 minutes.

    Grease the bottom and sides of a 9-inch round cake pan with a light coating of butter or cooking spray.

  3. Step 3

    Pour the flour, cocoa powder, and sugar into a large mixing bowl.

  4. Step 4

    Whisk these three dry ingredients together for about 30 seconds, lifting the whisk up and down repeatedly, until no streaks of cocoa powder remain.

    Create a small well in the center of the dry mixture by pushing the ingredients toward the sides with a whisk.

    Crack the eggs into a small bowl, add the melted butter and milk, and whisk together for about 20 seconds until the mixture looks uniform and pale.

    Pour the wet mixture into the well and use a wooden spoon to stir gently, scraping from the bottom and folding over the top, until no streaks of flour remain and the batter looks smooth and thick.

    Pour the batter into the prepared pan and smooth the top with a rubber spatula so it sits level.

    Place the pan in the center of the preheated oven and bake for 13–15 minutes, until a toothpick inserted into the center comes out with just a few moist crumbs clinging to it.

    Remove the cake from the oven using oven mitts and set it on a heat-safe surface to cool for 5 minutes.

    Run a thin knife around the inside edge of the pan to loosen the cake, then invert a serving plate or cake board on top and flip the pan and plate together so the cake slides out onto the plate.

    Let the cake cool for another 5 minutes at room temperature before slicing and serving.
