Step 1
Pat the 1 lb calamari rings very dry with paper towels; dry squid crisps up, wet squid steams.
Step 2
Heat 3 cups vegetable oil in a heavy pot over medium-high to 350°F, about 8 minutes; a pinch of flour should sizzle on contact.
Step 3
Stir 3/4 cup flour, 1 tsp salt and 1/2 tsp pepper in a bowl, then toss the calamari to coat and shake off the excess.
Step 4
Fry the rings in a single layer, in batches, about 2 minutes per batch, until golden and the edges curl slightly.
Step 5
Lift the rings out with a slotted spoon onto paper towels and sprinkle with a pinch of salt while hot.
Step 6
Warm the 1/2 cup marinara, cut the lemon into wedges, and serve everything straight away while the calamari is crisp.
