Step 1
Set the oven to 425°F and wait until the indicator light signals it has finished preheating, about 10 minutes.

Pat each potato dry with paper towels, then place on a cutting board and cut lengthwise into thin fries about 1/4-inch thick and 3 inches long, like steak fries.

Place the cut potatoes in a large bowl, pour 2 tablespoons of olive oil over them, sprinkle with 0.75 teaspoons of salt, and toss with your hands until every piece is coated.

Spread the fries in a single layer on a rimmed baking sheet, then scatter the 6 peeled garlic cloves over the top.

Place the baking sheet in the oven and bake for 18–20 minutes, stirring once halfway through, until the fries are deep golden brown and crispy at the edges.

Remove the baking sheet from the oven and let it cool for 1 minute, so the oil cools just slightly and won't cause the cheese to clump.

Drizzle the remaining 2 tablespoons of olive oil over the fries, then sprinkle the 0.33 cup grated parmesan and 3 tablespoons chopped parsley evenly over the top.

Toss gently with a spoon or tongs for about 10 seconds until the cheese, parsley, and garlic are distributed throughout.
