Step 1
Heat 1 tbsp neutral oil in a large skillet over medium-high until shimmering, about 1 minute.
Step 2
Add ground beef and cook, breaking it up with a spoon, until no pink remains, about 5 minutes.
Step 3
Stir in gochujang and 1 tbsp soy sauce until the beef is coated and fragrant, about 30 seconds.
Step 4
Divide warm rice between two bowls. Top each with seasoned beef, kimchi, and pickled onions.
Step 5
Wipe the skillet clean. Add 1 tsp sesame oil over medium heat and crack both eggs into the pan.
Step 6
Fry until whites set but yolks still jiggle, 3–4 minutes. Slide one onto each bowl and drizzle with remaining sesame oil.
