Step 1
Set the grill to medium-high heat and wait for the grates to become hot enough that a drop of water sizzles instantly, about 5 minutes.
Step 2
Place each lobster tail on a cutting board shell-side up, then using a sharp knife, cut lengthwise down the center of the shell and meat, splitting each tail into two equal halves.

Pat the exposed lobster meat dry with a paper towel, then sprinkle 0.25 teaspoon salt and 0.125 teaspoon pepper evenly over both halves.

In a small saucepan, melt 4 tablespoons butter over medium heat, then add 3 minced garlic cloves and stir constantly for 30 seconds until fragrant but not browned.

Place lobster tail halves on the grill grates with the meat side down; grill for 4 to 5 minutes until the meat turns opaque white and the edges begin to char lightly.
Step 6
Flip each tail half to shell side down, then immediately brush the exposed meat generously with the hot garlic butter mixture.

Grill shell-side down for 3 to 4 minutes until the internal temperature of the thickest part of the meat reaches 140°F on an instant-read thermometer, or until the meat is just opaque throughout.

Transfer the grilled lobster tail halves to a serving plate, then drizzle any remaining garlic butter over the top.

Cut the lemon halves in half lengthwise, then place one lemon wedge on the plate alongside the lobster for squeezing.

Scatter 2 tablespoons chopped parsley or chives over the lobster if desired, then serve immediately.
