Instructions

    Soak the 1 cedar plank in water for at least 1 hour, weighing it down with a plate so it stays submerged.

  2. Step 2

    Pat the 1.5 pounds salmon fillet dry and brush all over with the 2 tablespoons olive oil. Season evenly with the 1 teaspoon salt and 0.5 teaspoon black pepper.

  3. Step 3

    Preheat your grill to medium-high (about 400°F). Place the soaked plank on the grate and close the lid for 3-5 minutes until it starts to crackle and smell smoky.

  4. Step 4

    Place the seasoned salmon skin-side down on the hot plank. Close the lid and grill for 12-15 minutes, until the fish flakes easily with a fork and reaches 145°F in the thickest part.

  5. Step 5

    Carefully remove the plank from the grill using tongs. Squeeze the juice of the 1 lemon over the salmon, then slice and serve directly from the plank.

    Let the salmon rest for 2-3 minutes before serving to lock in the juices.
