Pound cutlets to 1/4-inch thickness. Season with salt and pepper.

Set up three shallow dishes: flour, beaten eggs, and breadcrumbs.

Dredge each cutlet in flour, dip in egg, then coat with breadcrumbs, pressing firmly.
