Step 1
Heat milk in a saucepan over medium until a few bubbles form at the edge, ~4 minutes.
Step 2
Whisk egg yolks with 2.5 tbsp sugar until pale yellow, about 90 seconds.
Step 3
Pour hot milk into yolks in a thin stream, whisking constantly to temper without scrambling.
Step 4
Strain custard through a fine sieve into a bowl, stir in vanilla, and set aside to cool.
Step 5
Whip egg whites and salt in a clean bowl until soft peaks form, ~2 minutes.
Step 6
Sprinkle in 1.5 tbsp sugar and whip until stiff peaks form and meringue is glossy, ~1 minute.
Step 7
Bring a shallow pan of salted water to a gentle simmer. Spoon meringue quenelles onto the surface.
Step 8
Poach meringues 2 minutes per side until set but still tender — they'll float and puff slightly.
Step 9
Pour custard into serving bowls and nestle warm meringues on top. Serve immediately.
