Step 1
Pound the 2 pork cutlets to 1/2 inch thickness. Season both sides with salt and pepper.
Step 2
Set up a breading station: place 0.5 cup flour in one dish, beat 2 eggs in another, and put 1.5 cups panko in a third.
Step 3
Dredge each cutlet in flour, dip in egg, then press into panko until fully coated.
Step 4
Heat 0.5 cup vegetable oil in a large skillet over medium-high. Fry the cutlets until golden brown and cooked through, about 3-4 minutes per side. Drain on paper towels.
Step 5
Mix 3 tbsp mayonnaise with 1 tbsp water to make a sauce. Spread on 4 slices of bread.
Step 6
Place a cutlet on 2 slices of bread, top with fresh herbs and a sprinkle of paprika or chili powder if you like. Close with the remaining bread.
Step 7
Slice each sandwich in half and serve warm.
