Step 1
In a large bowl, mix 2 cups flour, 1 tsp instant yeast, and 1 tsp salt. Gradually add 3/4 cup warm water and 1 tbsp olive oil, stirring until a shaggy dough forms.

Knead the dough on a floured surface for 5-7 minutes until smooth and elastic. Place in a lightly oiled bowl, cover, and let rise in a warm spot for 1 hour, or until doubled in size.

Preheat your oven to 450°F (230°C) with a baking sheet or pizza stone inside. Punch down the dough and divide into 4 equal pieces.

Roll each piece into a thin round, about 1/4-inch thick. In a small bowl, mix 3 tbsp za'atar with 2 tbsp olive oil to form a spreadable paste.
Step 5
Spread the za'atar mixture evenly over each dough round, leaving a small border. Carefully transfer the topped flatbreads onto the hot baking sheet.
Step 6
Bake for 8-10 minutes, until the edges are golden and the bottom is crisp. The top should look slightly blistered and the za'atar fragrant.
Step 7
Remove from the oven and serve warm, folded or cut into wedges. Enjoy as a breakfast with tea or as a snack.
