Instructions

  1. Step 1

    In a small bowl, mix 1 tsp agar agar powder with 1 cup water and 2 tbsp sugar. Bring to a boil, stirring, then pour into a shallow dish and refrigerate until set, about 20 minutes.

    In a mixing bowl, combine 1 cup glutinous rice flour, 1 tbsp matcha powder, and 0.5 cup water. Knead into a smooth dough, adding a splash more water if too dry.

    Roll the dough into 1-inch balls. Bring a pot of water to a boil, then drop in the balls and cook until they float, about 3-4 minutes. Remove with a slotted spoon.

  4. Step 4

    In a separate pot, combine 3 cups water, 0.25 cup sugar, and remaining 1 tbsp matcha powder. Stir over medium heat until sugar dissolves and broth is dark green, about 5 minutes.

  5. Step 5

    Cut the set jelly into small cubes. Divide the rice balls and jelly among bowls, then ladle the hot matcha broth over them.

  6. Step 6

    Sprinkle with 1 tbsp toasted sesame seeds and serve warm.
