Instructions

  1. Step 1

Rinse the 1 cup millet in a fine-mesh strainer under cold water until the water runs clear; drain well.

  2. Step 2

Heat the 2 tbsp olive oil in a large pot over medium heat. Add the 1 sliced onion and cook until soft and golden, about 6 minutes.

  3. Step 3

Stir in the 2 diced carrots and 1 diced potato, and the 1 tsp ground cumin. Cook, stirring, until the vegetables begin to soften, about 4 minutes.

  4. Step 4

Add the drained millet and stir to coat with the oil and vegetables, toasting for 2 minutes until it smells nutty.

  5. Step 5

Pour in the 2 cups vegetable broth and 1 tsp salt. Bring to a boil, then reduce heat to low, cover, and simmer until the liquid is absorbed and the millet is tender, about 20 minutes.

  6. Step 6

Remove from heat and let stand, covered, for 5 minutes. Fluff with a fork and serve warm.
