Step 1
In a bowl, combine 1 lb ground beef with 1 tsp salt and 1/2 tsp black pepper. Mix gently until just combined, being careful not to overwork the meat.
Step 2
Shape the mixture into 8 small patties, about 2 inches wide and 1/2 inch thick. Press your thumb in the center of each patty to prevent doming during cooking.
Step 3
Heat a large skillet over medium-high heat. Add the patties in a single layer, working in batches if needed. Cook for 2-3 minutes per side until browned and cooked through, with an internal temperature of 160°F.
Step 4
While the patties cook, toast the 8 mini buns cut-side down in a dry skillet over medium heat until golden, about 1-2 minutes. Sprinkle 1 tbsp sesame seeds over the cut sides and press lightly.
Step 5
In a small bowl, mix 2 tbsp mayonnaise and 2 tbsp ketchup to make a quick sauce. Spread a little sauce on the bottom half of each toasted bun.
Step 6
Place a cooked patty on each bun bottom, then top with a lettuce leaf. Cover with the bun top and secure with a toothpick if desired. Serve warm.
Step 7
Optional: Add sliced cheese, pickles, or onions if you have them. These burgers are best enjoyed immediately.
