Heat olive oil in a large skillet over medium-high heat until shimmering, about 1 minute.

Add bratwurst and sear without moving for 3 minutes until edges turn golden brown.

Flip each bratwurst and sear the other side for 3 minutes until cooked through.

Remove bratwurst to a plate. Reduce heat to medium and add sliced onion to the skillet.

Add sauerkraut, caraway seeds, and beef broth to the skillet; stir to combine.

Simmer for 4 minutes until sauerkraut is heated through and liquid reduces slightly.

Return bratwurst to skillet, nestling into the sauerkraut, and warm for 1 minute.

Season with salt and pepper. Serve bratwurst on a plate topped with sauerkraut and onion.

Serve with whole grain mustard on the side.
