Instructions

  1. Step 1

    In a large bowl, whisk together the 1.5 cups flour, 2 tsp baking powder, and 0.5 tsp salt until combined.

    In a separate bowl, whisk the 1.25 cups milk, 1 egg, and 3 tbsp melted butter until smooth.

  3. Step 3

    Pour the wet ingredients into the dry and stir with a fork just until no dry streaks remain—lumps are fine, do not overmix.

  4. Step 4

    Heat a large nonstick skillet or griddle over medium heat. Lightly grease with a little butter or oil.

  5. Step 5

    Pour 1/4 cup of batter per pancake onto the hot skillet. Cook until bubbles form on the surface and edges look set, about 2-3 minutes.

  6. Step 6

    Flip and cook until golden brown on the other side, about 1-2 minutes. Repeat with remaining batter, keeping cooked pancakes warm.

    Stack the pancakes on a plate, top with the 2 tbsp butter and drizzle with the 0.5 cup maple syrup. Serve immediately.
