Paper Dosa

A crispy, golden paper-thin dosa served with spicy sambar and cooling coconut chutney. This South Indian classic is surprisingly simple to make at home with a ready-made batter.

Instructions

  1. Step 1

    Stir the 2 cups dosa batter with 0.5 tsp salt and 2 tbsp water until smooth and pourable, about 1 minute.

  2. Step 2

    Heat a large non-stick skillet over medium-high heat until a drop of water sizzles, about 2 minutes.

  3. Step 3

    Pour a ladleful of batter in the center and quickly spread it in a spiral outward to make a thin, large circle, about 12 inches.

  4. Step 4

    Drizzle 1 tbsp oil around the edges and cook until the top looks dry and the bottom turns golden and crisp, about 3-4 minutes.

  5. Step 5

    Flip the dosa and cook the other side for 1 minute until lightly browned, then fold it in half and transfer to a plate.

  6. Step 6

    Repeat with remaining batter, using 1 tbsp oil per dosa, to make 3 dosas total.

  7. Step 7

    Serve each dosa with 1/3 cup sambar, 2 tbsp coconut chutney, and a few slices of bell pepper on the side.
