Rinse poha in a fine-mesh strainer under cool water for 30 seconds until just moist; let drain.
Step 2
Cut potatoes into 1/4-inch dice and onion into small dice.
Step 3
Heat oil in a large skillet over medium-high until it shimmers, about 1 minute.
Step 4
Add diced potatoes and cook without stirring for 2 minutes until the edges begin to turn golden.
Step 5
Stir potatoes and cook another 2–3 minutes until they soften and the edges crisp slightly.
Step 6
Add diced onion and cook, stirring, until softened and fragrant, about 90 seconds.
Step 7
Add drained poha and peanuts, tossing gently to combine, about 1 minute.
Step 8
Squeeze lemon juice over and season with salt, turmeric, and green chili powder to taste.
Step 9
Toss once more and serve immediately while poha is still warm and crispy.
