Place a pork cutlet between two pieces of plastic wrap and pound until 1/4-inch thick.
Step 2
Lay one ham slice and one cheese slice on each cutlet, leaving a 1/2-inch border. Roll tightly and secure with a toothpick if needed.
Step 3
Set up three shallow bowls: flour in the first, beaten egg in the second, panko in the third. Season flour with salt and pepper.
Step 4
Coat each pork roll in flour, then egg, then panko, pressing gently so crumbs stick. Place on a clean plate.
Step 5
Heat 2 tbsp butter and 1 tbsp olive oil in a 12-inch skillet over medium-high heat until the oil shimmers, about 90 seconds.
