Step 1
Preheat oven to 475°F with a pizza stone or baking sheet inside. Roll out the 1 lb pizza dough on a floured surface to your desired thickness.
Step 2
Heat 1 tbsp olive oil in a skillet over medium heat. Add 1 sliced onion and cook until soft and golden, about 8 minutes. Remove from heat.
Step 3
In the same skillet, cook 0.5 lb sausage (casings removed) over medium-high, breaking it up, until browned and cooked through, about 5 minutes.
Step 4
Spread 0.5 cup tomato sauce evenly over the dough, leaving a 1-inch border. Sprinkle with 0.5 tsp salt and 0.25 tsp black pepper.
Step 5
Top with 2 cups mozzarella, then scatter the cooked sausage and onions over the cheese.
Step 6
Transfer the pizza to the preheated stone or sheet. Bake until the crust is golden and the cheese is bubbly and browned in spots, about 12-15 minutes.
Step 7
Let the pizza rest for 2 minutes before slicing and serving.
