Instructions

    Heat oil in a large skillet over medium-high. Working in batches, sear lamb until browned on two sides, ~2 minutes per batch. Set aside.

    Toast guajillo chiles in the same skillet for 30 seconds until fragrant. Tear them into pieces; set aside.

  3. Step 3

    Add onion and garlic to the skillet. Cook until softened and fragrant, ~2 minutes, stirring constantly.

  4. Step 4

    Return lamb to skillet. Add consomé, chile pieces, and cumin. Bring to a simmer.

  5. Step 5

    Simmer uncovered for 12 minutes, stirring occasionally, until lamb is tender and broth is rich and dark.

  6. Step 6

    Divide stew between bowls. Serve with lime wedges, salsa on the side, and extra consomé drizzled over the top.
