Instructions

    Soak the dried lotus leaf in warm water for 30 minutes until soft and pliable. Drain and pat dry.

    In a bowl, mix the 2 cups glutinous rice flour, 1.5 cups water, and 0.5 teaspoon salt until a smooth, thick batter forms.

  3. Step 3

    Pour the batter into a heatproof dish and place it in a steamer. Steam over high heat for 20 minutes, until the batter is translucent and set.

    Let the cooked dough cool slightly, then knead it on a floured surface until smooth and elastic, about 5 minutes.

    Divide the dough into 8 equal pieces and roll each into a ball, then flatten into a disc about 3 inches wide.

  6. Step 6

    Place the lotus leaf on a steaming rack, arrange the dough discs on top, and steam for 10 minutes until glossy and tender.

    Serve the warm dumplings on the lotus leaf with fresh lettuce leaves for wrapping. Add herbs or dipping sauce if desired.
