Step 1
Thinly slice the 4 green onions, separating white and green parts. Finely chop the 1 red chili pepper and mince the 2 garlic cloves.
Step 2
Heat 1 tbsp vegetable oil in a large skillet over high heat until shimmering, about 1 minute.

Add the ground pork and cook, breaking it up with a spatula, until browned and no longer pink, about 5-7 minutes.
Step 4
Add the white parts of the green onions, the chopped chili, and the minced garlic. Stir-fry until fragrant, about 1 minute.
Step 5
Pour in the 3 tbsp soy sauce and stir to coat the pork. Cook for another 1-2 minutes until the sauce is slightly reduced and glossy.

Remove from heat and stir in the green parts of the green onions. Serve hot over rice or noodles.
