Step 1
Soak the 8 oz rice noodles in warm water for 10 minutes until pliable, then drain. Meanwhile, slice the 1 onion and chop the 3 green onions.
Step 2
Heat 2 tbsp oil in a wok or large skillet over high heat. Add the 8 oz pork and 1 sliced onion; stir-fry until pork is browned and onion is soft, about 4 minutes.
Step 3
Push pork to one side, crack the 8 quail eggs into the pan, and scramble them for 1 minute until just set.
Step 4
Add the drained noodles and 3 tbsp soy sauce; toss everything together for 2-3 minutes until noodles are heated through and slightly charred.
Step 5
Stir in the chopped green onions, then serve topped with the 2 tbsp crushed peanuts.
