Step 1
Soak the 8 oz rice noodles in hot water until pliable, about 10 minutes, then drain.
Step 2
Whisk 3 tbsp soy sauce, 2 tbsp oyster sauce, and 2 tbsp water in a small bowl.
Step 3
Heat 1 tbsp oil in a wok over high heat. Add 2 cups broccoli and 1 sliced carrot; stir-fry until crisp-tender, about 4 minutes. Remove.
Step 4
Add remaining 1 tbsp oil, then 2 minced garlic cloves and 8 oz sliced char siu; stir-fry until fragrant, 1 minute.
Step 5
Add noodles and sauce; toss to coat, about 2 minutes.
Step 6
Return vegetables; toss everything until hot and well combined, 1-2 minutes. Serve.
