Instructions

  1. Step 1

Cut the bitter melon into 1 inch thick rings, scoop out the seeds and white pith. Sprinkle with 1 tsp salt, let sit 10 minutes, then rinse and pat dry.

  2. Step 2

In a bowl, mix the ground pork, 1 finely chopped green onion, 1 tbsp soy sauce, and 1 tsp cornstarch until well combined.

  3. Step 3

Stuff each bitter melon ring with the pork mixture, pressing firmly to fill the cavity.

  4. Step 4

Heat the 2 tbsp vegetable oil in a large skillet over medium-high. Add the stuffed rings and cook until browned on both sides, about 3 minutes per side.

  5. Step 5

Add the minced garlic, remaining 1 tbsp soy sauce, and 0.5 cup water. Cover and simmer until the pork is cooked through and the melon is tender, about 10 minutes.

  6. Step 6

Mix the remaining 2 tsp cornstarch with 2 tbsp water, stir into the sauce, and cook until thickened, about 1 minute. Garnish with sliced green onion and red chili if desired.
