Step 1
Preheat your oven's broiler. Slice the 1 baguette diagonally into 12 slices about 1/2 inch thick.
Step 2
Brush both sides of each bread slice with 2 tbsp of the olive oil. Place them on a baking sheet.
Step 3
Broil the bread for 1-2 minutes per side until golden and crisp. Watch closely to avoid burning.
Step 4
Dice the 3 tomatoes and toss with the remaining 1 tbsp olive oil, 0.5 tsp salt, and 0.25 tsp black pepper in a bowl.
Step 5
Slice the 8 oz mozzarella into 1/4 inch thick pieces. Place one slice on each toasted bread piece.
Step 6
Spoon the tomato mixture over the cheese, dividing evenly among the slices.
Step 7
Broil for 2-3 minutes until the cheese melts and the tomatoes are warm, with edges slightly charred.
Step 8
Drizzle the 0.25 cup pesto over the hot bruschetta. Serve immediately.
