Instructions

  1. Step 1

    Pat the 1 lb beef steak dry and season both sides with the 0.5 tsp salt and 0.5 tsp black pepper. Let sit at room temperature for 10 minutes.

    Mince the 2 garlic cloves and mix with the 2 tbsp soy sauce in a small bowl.

  3. Step 3

    Heat the 1 tbsp vegetable oil in a cast-iron or heavy skillet over high heat until shimmering. Add the steak and sear for 3-4 minutes per side for medium-rare, or until browned and cooked to your liking. Transfer to a plate and let rest.

  4. Step 4

    Reduce heat to medium and add the 2 tbsp butter to the skillet. Once melted, add the garlic-soy mixture and cook for 30 seconds until fragrant, scraping up any browned bits.

  5. Step 5

    Return the steak to the skillet, spoon the sauce over it, and push it to one side. Crack the 2 eggs into the empty side of the skillet.

  6. Step 6

    Cover the skillet and cook for 2-3 minutes until the egg whites are set but yolks are still runny. Serve immediately with the steak and eggs on a warm plate.

  7. Step 7

    Slice the steak against the grain and serve with the fried eggs, spooning any extra sauce from the skillet over the top.
