Step 1
Mix crumbled cake and frosting in a bowl until the mixture looks like wet sand and holds together when squeezed.
Step 2
Roll the mixture into 12 balls, each about the size of a walnut. Chill on a plate for 10 minutes.
Step 3
Microwave chocolate chips and coconut oil together for 90 seconds, stirring halfway. The mixture should be smooth and pourable.
Step 4
Dip the tip of each stick into chocolate, then push it into a cake ball about halfway. Chill for 5 minutes.
Step 5
Dip each cake pop into the chocolate, twisting gently to coat all sides. Let excess drip off.
Step 6
Sprinkle the wet chocolate with rainbow sprinkles, then stand upright in a dessert cup or tall glass to set for 2 minutes.
