Step 1
Heat the oven to 375°F and rub a 9 inch baking dish with 1 tbsp of the butter to grease it.
Step 2
Whisk 1 cup flour, 1/2 cup of the sugar, 2 tsp baking powder, 3/4 cup milk and 3 tbsp melted butter into a smooth batter.
Step 3
Spread the batter over the dish base; it should be thick and sticky, like heavy pancake batter.
Step 4
Toss the 5 cups diced apples with the remaining 1/4 cup sugar and 1 tsp cinnamon, then pile them evenly on the batter.
Step 5
Bake 35-40 minutes until the top is deep golden and the apple juices bubble thickly at the edges.
Step 6
Rest 10 minutes so the sauce around the apples thickens, then serve warm straight from the dish.
