Pat lamb cubes dry with paper towels. Season generously with salt and black pepper.
Step 2
Thread lamb and apricot halves alternately onto four metal skewers, starting and ending with lamb.
Step 3
Whisk olive oil, apricot jam, vinegar, and paprika in a bowl until smooth and glossy.
Step 4
Brush glaze generously over all sides of the skewers, coating meat and apricots.
Step 5
Broil 4 inches from heat for 6–8 minutes, rotating once halfway through, until edges char and lamb is medium-rare.
Step 6
