Step 1
In a bowl, mix 2 cups cooked rice, 1/2 cup diced ham, and 1/2 tsp salt until well combined.

Shape the rice mixture into 8 balls, pressing a cube of mozzarella into the center of each and sealing the rice around it.
Step 3
Beat 2 eggs in a shallow dish. Roll each rice ball in the beaten eggs, then coat evenly with 1 cup breadcrumbs.
Step 4
Heat 2 tbsp olive oil in a large skillet over medium heat. Add the arancini and cook until golden brown on all sides, about 8-10 minutes, turning occasionally.
Step 5
In a small saucepan, warm 1 cup crushed tomatoes over low heat until simmering, about 5 minutes. Season with salt to taste.
Step 6
Serve the hot arancini with the tomato sauce on the side for dipping.
Step 7
Garnish with fresh lettuce and sunflower seeds if desired.
