Remove onion from heat. Cool 2 minutes, then combine with liver, bread, egg, salt, and pepper in a bowl.

Mix until just combined—the mixture should hold together loosely. Don't overmix or the dumplings will be dense.

Bring beef broth to a gentle simmer in a large pot over medium-high heat.

Wet your hands lightly. Form the liver mixture into 12–16 dumplings, each roughly 1.5 inches across.

Slide dumplings into simmering broth. They will sink, then float to the surface after 5–7 minutes.
