Step 1
Pat the 1 lb fish fillets dry and season both sides with salt and pepper. Set up three shallow bowls: 0.5 cup flour, 1 beaten egg, and 1 cup panko breadcrumbs.
Step 2
Dredge each fillet in flour, then dip in egg, then coat with panko, pressing gently so the crumbs stick. Place the coated fillets on a plate.
Step 3
Heat 0.5 cup vegetable oil in a large skillet over medium-high until shimmering, about 2 minutes. The oil should sizzle when a crumb is dropped in.
Step 4
Fry the fish in batches without crowding, cooking until golden brown and crisp, about 3-4 minutes per side. The fish should flake easily with a fork when done.
Step 5
Drain the fried fish on paper towels. Arrange 2 cups lettuce and 1 cup cherry tomatoes on plates, top with the crispy fish, and serve with 2 cups cooked rice.
Step 6
Optional: squeeze fresh lemon juice over the fish before serving for extra brightness.
