Step 1
Melt butter in a skillet over medium heat, then add flour and stir for 90 seconds until it smells nutty and looks light brown.

Pour milk in slowly while stirring constantly to avoid lumps. Cook for 2 minutes until thick and smooth, then fold in diced ham.

Spread the ham mixture on a plate and refrigerate for 10 minutes until cool enough to handle.

Scoop the mixture into 12 golf-ball-sized portions and shape each one into a cylinder about 2 inches long.

Whisk the egg in a shallow bowl. Place breadcrumbs in another bowl. Coat each croqueta in egg, then roll in breadcrumbs.

Heat oil in a deep skillet to 350°F. Fry croquetas 4-5 at a time for 2 minutes until golden brown on all sides, turning once.
Step 7
Drain on paper towels. Serve hot with lime or a dipping sauce if desired.
