Step 1
In a large bowl, whisk together the 1 cup flour, 1 tsp baking powder, and 1/4 cup sugar until combined.
Step 2
In a separate bowl, beat the 2 eggs, then whisk in the 1/2 cup milk, 1/4 cup water, and 2 tbsp vegetable oil until smooth.
Step 3
Pour the wet ingredients into the dry and stir until just combined; the batter should be lumpy, not overmixed.
Step 4
Heat an eggette pan over medium heat for 2 minutes, then brush both sides lightly with oil.
Step 5
Pour the batter into the pan, filling each mold about 3/4 full, and close the pan.
Step 6
Cook for 3-4 minutes per side, flipping once, until the eggettes are golden brown and crisp on the outside.
Step 7
Remove from the pan and serve immediately with the 1 cup fresh pineapple chunks.
