Step 1
Pat dry 1 lb squid rings with paper towels. Season with salt and pepper.
Step 2
In a bowl, whisk 1 cup flour, 1/2 cup cornstarch, 1 tsp baking powder, and 1/2 tsp salt.

Gradually whisk in 1 cup sparkling water until smooth. The batter should be thin and lump-free.
Step 4
Heat 3 cups vegetable oil in a deep pot to 375°F. Use a thermometer if you have one.
Step 5
Dip squid rings into batter, letting excess drip off. Fry in batches without crowding, until golden and crispy, about 2-3 minutes per batch.
Step 6
Remove with a slotted spoon and drain on paper towels. Sprinkle with salt immediately.
Step 7
Serve hot with sweet chili sauce and lime wedges. Garnish with cilantro and red chili if desired.
