Set the oven to 425°F and wait for the indicator light or beep to signal it has finished preheating, about 10 minutes.

Rinse the potato under cold running water and scrub the skin with a vegetable brush or clean cloth to remove all dirt.

Place the potato on a cutting board and slice it lengthwise into 1/4-inch-thick planks, like cutting bread; discard the rounded edges.

Stack each plank and cut it lengthwise into 1/4-inch-thick batons—like french fry sticks—so each piece is about 3 inches long.

Place the potato batons in a large bowl, pour 2 tablespoons of the olive oil over them, sprinkle with salt and pepper, and toss with your hands until every piece is coated.

Spread the oiled fries in a single layer on a sheet pan, leaving no overlap; transfer to the preheated oven.

Roast for 18–20 minutes, stirring the fries halfway through at the 9-minute mark, until the surface is golden brown and crispy at the edges.

Remove the pan from the oven and set it on a heat-safe surface or trivet so you do not burn your hands.
